Ingredients:
1 lb Chicken Breast
4 cups of Chicken Broth
1 square piece of dried Kombu 
3 tbsp of low sodium soy sauce
1 tbsp rice wine vinegar
1 tbsp sesame oil
2 tbsps of sesame seeds
1 tsp of oyster sauce
1-2 cloves of minced garlic
1 cup of chopped broccoli
1/2 bell pepper thinly sliced
1/2 onion thinly sliced
Cooked corn for topping 
Finely chopped green onion for topping
Thin sliced seaweed for topping
2 dried ramen noodles. (If using packaged ramen, do not use the seasoning packets)
 
Directions:
1. Set the @pamperedchef quick cooker setting to SEAR.
2. Drizzle a little avocado oil in the pot and sear the chicken breast for 2-3 minutes flipping halfway through.
3. Take out the chicken and set aside. 
4. Toss in the bell pepper, garlic, and onion and sear for 2-3 minutes. Add the chicken broth, kombu, soy sauce, rice wine vinegar, sesame oil, sesame seeds and oyster sauce. Place the chicken breasts back into the pot. 
5. Set the quick cooker to the Poultry setting and adjust the time to 6 minutes. The chicken breasts I used were thinly sliced. (If your chicken breasts are larger, adjust the time for longer until chicken is cooked through)
6. Let the steam naturally release for 10 minutes and then press quick release to let the rest of the steam out. 
7. Press cancel and open the lid. 
8. Take out the chicken breast and shred with two forks. 
9. Set the quick cooker back to SEAR and add in the broccoli for 2-3 minutes.
10. Top with a glass lid. Once the time is up. Press cancel. 
11. Lastly, add in your ramen noodles and the shredded chicken and let it sit in the broth for 3-4 minutes with the lid on. 
12. Enjoy right away! Add extra toppings like sliced green onion, cooked corn and dried seaweed. And don't forget the extra sesame seeds!

Ramen Frittata Recipe:
**When storing ramen leftovers for ramen frittata -  store in a glass container with no broth. Just the chicken, veggies and remaining noodles.
1. In a mixing bowl whisk 6 eggs with 4 tbsp of water. Salt and pepper to taste.
2. Pour into a greased ceramic pot for the quick cooker. Add the leftover ramen leftovers on top. (I like to give it a quick chop to make the veggies and chicken a little smaller)
3. Set the quick cooker to steam. And adjust the time to 13 minutes. Let the steam release naturally for 10 minutes and then press quick release to release any steam.
4. Pull out with oven mitts. Slice and enjoy! 08/19/2021
