We used two types of cheesecake. One is baked and the other is cold cheesecake. Which one is your favorite?

Baked New York Style cheesecake is defined by its dense, rich and crumbly texture which is a key element of its traditional appeal. Its hallmark features, such as the browned, slightly cracked top and crumbly edges, are natural results of the high-heat baking process. Minor cracking on the surface is a definitive sign of authenticity, not that the cake is old or stale.

Cold-Set cheesecake achieves a lighter, creamier, and almost mousse-like texture, often with the addition of gelatin. Set in the refrigerator, this method creates a smooth, flawless, and clean top surface, making for a distinct visual and textural experience, often finished with delicate toppings like fresh berries. The baked cheesecake (on the left) is dense and rustic, while the cold-set cheesecake (on the right) is light and smooth.
