Over the weekend, Darkstar had the privilege of hosting the WA/SA Community Coffee Championships, bringing together some of the region’s most talented baristas, brewers, latte artists and coffee professionals.

The Community Coffee Champs are designed to make coffee competitions more accessible, creating a welcoming environment where competitors of all backgrounds can showcase their skills and progress towards the Australian Coffee Championships.

From early morning pours to nail biting finals, the level of talent, passion and sportsmanship on display was incredible.

A huge congratulations to every competitor who stepped up, every judge and volunteer who made the event possible and everyone who came along to support Australia’s speciality coffee community.

We’re proud to have opened our doors to an event that celebrates learning, connection and the craft of great coffee.

What is a pour over? ☕

A pour over is a manual brewing method where hot water is slowly poured over freshly ground coffee, allowing it to filter through the grounds and extract flavour as it drips into the cup below. It’s a clean, precise way of brewing that highlights the natural character of each coffee.

We rotate a selection of coffees so you can experience different origins and flavour profiles side by side:

Co fermentation session with Marcus at the La Marzocco Open House ☕
Marcus dived into how co fermented coffee is made, what actually happens during fermentation and how different fruits can completely shape the final cup.
Marcus walked everyone through the process of our newest blend - Strawberry Shortcake, followed by tasting sessions that gave people a chance to experience just how much processing impacts flavour.
From fermentation tanks to the final brew - it was a great chance to slow it down, ask questions and give it a taste!

A recap of our La Marzocco open house event at Darkstar.
We had coffee professionals in the space sharing knowledge, pouring shots, talking technique and breaking down what goes into making great coffee on La Marzocco home machines.
From machine demos to hands on tastings, latte art sessions and co fermentation conversations, it was a full morning of learning directly from people who live and breathe coffee every day.
A big thank you to La Marzocco for sharing their expertise and giving everyone the chance to learn more about getting the best out of a home setup.
And thank you to everyone who came down, asked questions and got involved. ☕️

How does co-fermented coffee actually work? 🍓☕

For this coffee, only the ripest cherries were picked before beginning a 72-hour anaerobic fermentation process.

During fermentation, fresh strawberries were added directly into the tanks with the coffee cherries, allowing the fruit and coffee to ferment together and develop deeper sweetness, body and complexity naturally through processing.

After fermentation, the cherries were pulped and dried slowly on raised beds until reaching the perfect moisture level - carefully monitored the entire way through.
The result?

A bold, fruit-forward coffee with notes of fresh strawberry, vanilla ice cream and buttery shortcrust pastry 🍓
