Tonight’s dinner is a Singaporean 2 step curry. Coconut rice. Dessert is a steamed pecan, apple, carrot pudding. Drinks- virgin raspberry mojito.

I just came home from a massage & physio and didn’t feel like cooking and this is so simple to throw together (rice and drinks we made up yesterday) the other two dishes were a dump, mix and let it do its thing while im enjoying a cup of tea relaxing. Normally I could not eat this at a restaurant, but because I have full control of the ingredients I am able to enjoy a beautiful meal on a Friday night without having to stand on my sore foot for ages. 15 min prep in total for all 4 dishes is all i needed tonight. I am so grateful for my Thermomix TM7 & my TM6 for making life, time and my health much better to manage on my hard days.
