Vodka Day

Ingredients
60ml (1 shot) Vodka
178ml lemonade
Ice
Lemon wedges for garnishment, if desired

Method
Fill a cocktail shaker halfway with ice. Pour vodka and lemonade into it and shake well.
Fill a glass with ice and pour mixture in.
Garnish with lemon wedges or slices if desired.
Alternatively, you can skip the cocktail shaker and just fill a glass with ice, then pour vodka and lemonade in and stir well.

Lemon Rice

Ingredients
1 Tablespoon butter
1 small onion chopped
1 cup Mahatma rice
zest of 1 lemon
juice of 1 lemon
2 cups chicken broth
salt and freshly ground black pepper
½ teaspoon fresh herbs
1 green onion chopped, optional garnish

Instructions
In a medium pot, melt butter and cook onion for 2 minutes on medium heat without browning. Stir in rice, lemon zest, and lemon juice. Add chicken broth, salt and pepper. Cover and simmer for 15 minutes. Remove from heat and allow to rest for 5 minutes. Add tarragon and green onion if using and stir.

If you're cooking a recipe that calls for sautéing both onions and garlic, do the onions first. Onions take longer to soften up, while garlic burns pretty easily. So it only makes sense to cook the former first — then drop the garlic in as the onions are finishing.

Punch Day

Happy Punch Day. The day comes just in time for summer. Here is a simple punch recipe to celebrate:

Ingredients
8-10 strawberries , halved or sliced
½ orange , sliced
½ lemon , sliced
handful of mint leaves
large handful of ice
500ml pineapple juice
300ml orange juice
300ml lemonade

Method
Put the fruit, mint and ice in a large jug. Pour in the juice, stir and top up with lemonade.

6 tablespoons sliced almonds plus extra for garnish if desired
1/4 teaspoon pepper
juice from 1/2-1 lemon optional

Method
Preheat oven to 190º C. Melt butter in a heavy skillet, then add rice. Cook, stirring often, until light brown. Stir in chicken broth and eat until boiling. Pour everything into lightly greased casserole dish, then cover and bake for 30 minutes. Remove from oven and stir in celery, parsley, carrots, and sliced almonds, then pepper. Cover and bake for additional 20 minutes. Remove from oven, and squeeze fresh lemon juice over everything and stir (optional). Garnish with sliced almonds, if desired.

As soon as water is level with the rice, lower the heat, and cover it for a fluffy outcome

Jollof Rice

Ingredients
3-4 tablespoons(42ml-56ml) vegetable oil
1 medium onion , diced, (red or white onions)
2 teaspoons thyme, optional
1 tablespoon (8g) minced garlic or (9.7g) garlic powder
3 cups (591g) rice
1 tablespoon (7g) paprika
2 teaspoons (4g) chicken bouillon
salt and pepper to taste
1 can of tomato sauce or puree
4 cups (1000ml) chicken broth or water
1 scotch bonnet pepper or ¾ teaspoon hot pepper
453.59g vegetables (optional)
parsley for garnishing

Method
Heat oil in a medium saucepan over medium-high heat.Next add onions, thyme, and garlic, cook for about 2 minutes or until onion becomes soft and translucent. Add rice, season with paprika, bouillon, salt, and pepper. Cook stirring often until fragrant, for about 30 seconds. and brown stirring occasionally, for about 2-3 minutes. Pour tomatoes sauce, chicken broth, and hot pepper, if using any into saucepan. Bring to a boil stirring once or twice. Reduce heat to low, cover saucepan and simmer until rice is tender and liquid is absorbed, for 15-18 minutes. Remove pan from heat, let it sit covered for 5 minutes then fluff rice with a fork or serving spoon. Then throw in sauteed veggies and/or beef, chicken and shrimp and mix, if desired Garnish with parsley and serve.

Rice Tart

Ingredients
1 ½ cups plus 1 tablespoon all-purpose flour and more for dusting
1 tablespoon plus 1/2 cup sugar
1 teaspoon salt
1 teaspoon baking powder
11 tablespoons cold unsalted butter, in 11 slices
½ cup rice
3 cups milk
2 teaspoons grated lemon zest
½ cup blanched almonds, finely ground in food processor
3 large eggs
Confectioners' sugar

Method
Combine 1 1/2 cups flour, 1 tablespoon sugar, 1/2 teaspoon salt and the baking powder in food processor. Pulse to blend. Add 10 tablespoons butter and pulse 3 to 4 times, until butter is in pea-size pieces. Sprinkle in 3 tablespoons cold water. Pulse 4 times. Turn dough out on lightly floured work surface and knead gently a few times to form a disk. Wrap in plastic and refrigerate at least 1 hour. Meanwhile, half fill a saucepan with water, bring to a boil, stir in rice, lower heat to medium and cook until rice is soft, about 15 minutes. Drain rice and return it to saucepan. Add milk, remaining butter, 1/2 cup sugar and remaining salt. Bring to a boil over medium heat. Reduce heat to low and simmer until mixture has thickened almost to a risotto consistency, about 25 minutes. Place saucepan in a large bowl of ice and water 10 minutes, to cool mixture to tepid. Purée in food processor. Pour into a bowl and add lemon zest. Mix ground almonds with 1 tablespoon flour and add to bowl. Stir in eggs one at a time. Place oven rack in lowest position and preheat oven to 180 degrees. Remove pastry from refrigerator and place on lightly floured surface. Lightly dust top with flour. Use a rolling pin to press down on dough to soften it. Roll out disk. Transfer to a pan with a removable bottom. Press dough evenly into pan. Trim edges flush with pan. Pour filling into pastry. Bake about 35 minutes, until filling is set and golden. Cool on a rack. Dust with sifted confectioners’ sugar before serving.
