“Rougaille”
This face-saving dish for all Mauritian housewives is at the heart of all creoles cooking. Tasty, easy to prepare, easy to digest, “Rougaille” can be enjoyed with rice, breads, and Parathas. By the twist of tongue, “Rougaille” is an amalgam of two words “roux” or a red sauce with “Ail” French word for garlic. The base of the sauce is tomatoes, also called “pommes d’amours” “love apples” A New World species, the first tomatoes grown in Europe were called “love apples” or “pommes d’amours” by the French.
Serves 4
1-Can 425/440g chopped tomatoes with juice
1onion, sliced fine
1 tbsp grated fresh garlic
1 tbsp grated ginger
4 sprigs thyme
1 bunch fresh chopped parsley
2 tbsp vegetable oil
1 tsp salt
In a pan, heat oil, sauté onions, add thyme, garlic and ginger, stir and cook until fragrant.
Stir in tomatoes with can juice and salt. Cover and simmer on low heat for 10 minutes.
Garnish with chopped parsley. Voila your “Rougaille” is ready. Enjoy!
“Rougaille” may be enjoyed as is.
A great sauce for your pastas, favourite meats, fish, bacon, soya nuggets, or as pizza sauce.
Sausages Rougaille
Par boil 400g of your favourites sausages. for 10 minutes
When cool enough to touch.
Slice sausages, into 1.5cm tick
Add to the sauce, stir, cover, simmer 10 minutes, ENJOY!
Keep left over sauce, cover in the fridge and use within 3 days.
