Yesterday I went with the Futurelife Foundation to visit Edamini Primary School in Shongweni Dam to spoil 1125 children with a nutritious breakfast in celebration of International School Meals Day because it's clear that YOU CANNOT TEACH A HUNGRY CHILD.

This may be the most delicious meal EVER!
Roast butternut squash risotto (but made with low GI jasmine + quinoa), grilled chicken + green leafy vegetables. Eating healthy doesn't need to be repetitive or boring. Yummmm

Having my last serving of this gorgeous butternut, chicken, chickpea + coconut Thai curry which I batch-cooked earlier this week. Served with fluffy white low GI jasmine rice, tomato, cucumber, red onion sambal + fresh coriander.
Spend some time this weekend to think of 1-2 meals which you could batch cook for next week and go shopping for those ingredients. It will make your life and being healthy so much easier! And without a doubt save you some cash too 👌

I made a giant batch of the famous Stripped Green Smoothie by 🌱
Packed with antioxidants, fibre and other essential nutrients, it's an easy way to get in your daily greens.
Adding loads of filtered or coconut water and blending it in a really good blender, it comes out more like a juice than a smoothie, without the wastage. It also keeps really well in a large jar.

That doesn’t mean you need to start stocking up on tofu, unless you want to, it just means trying to eat smaller and fewer portions (by adding in more vegetables, beans and pulses – remember the eatwell plate?), or choosing chicken or fish instead.
