Warning: this Marry Me Chicken might have people asking for seconds… and your hand in marriage. 😂🍝✨

Quick, easy, and tastes like something you’d order at a restaurant.

Ingredients:
• 1 onion, finely chopped
• Olive oil
• 1 tablespoon butter
• Garlic, finely chopped (to taste)
• 2–3 chicken breasts (enough for 2 people)
• Spices: chicken spice, dried herbs, paprika, a pinch of turmeric, salt and pepper
(add any extra spices you love)
• Chicken stock
• 250 ml fresh cream
• Sun-dried tomatoes, chopped
• Pasta (any type, but penne works especially well)
• Spinach (optional, but highly recommended)
• Cheese: Parmesan, or white Cheddar/Gouda

Method:

Heat olive oil and butter in a pan. Fry the onion and garlic until soft and lightly golden.
Add the chicken breasts (I cut mine into chunky cubes, but you can shred them later if preferred).
Season with all the spices and add the sun-dried tomatoes. Cook until the chicken is fully done.
Meanwhile, bring a pot of salted water to the boil for the pasta. Add a little oil to prevent sticking. Cook pasta according to package instructions.
Remove the cooked chicken from the pan and set aside.
In the same pan, add the cream and dissolved chicken stock. Heat gently.
Shred the chicken and return it to the sauce.
Once the pasta is cooked, add about 1 cup of pasta water to the sauce. This helps thicken the sauce and coat the pasta beautifully.
Add the spinach (finely chopped) and simmer for a few minutes until the sauce is creamy and thick.
(If the sauce gets too thick, add a little water or milk.)
Finally, stir in the cheese until melted, then mix the pasta through the sauce.

This week’s sweet treat is a rich, buttery, chocolatey classic — Millionaire’s Shortbread 🍫🤎

Layers of crumbly shortbread, smooth caramel, and marbled chocolate make this the ultimate indulgence. Here’s the full recipe 👇

🍪 Millionaire’s Shortbread

For the shortbread:
• 200g unsalted butter, softened
• 100g icing sugar
• 2 tsp vanilla extract
• 240g plain flour
• 40g corn flour
• ¼ tsp salt
• Splash of milk

For the caramel:
• 100g unsalted butter
• 1 tin condensed milk
• 50g white sugar
• 50g golden syrup
• ¼ tsp salt

For the topping:
• 180g dark or milk chocolate
• 80g white chocolate

👩‍🍳 Method

1️⃣ Preheat oven to 180°C. Grease and line a square cake tin.

2️⃣ Beat butter, icing sugar, and vanilla until light and fluffy. Mix in flour, corn flour, and salt until a soft dough forms. Press into the tin and bake for 35–40 mins until lightly golden. Cool completely.

3️⃣ For the caramel, heat butter, condensed milk, sugar, and golden syrup over low heat, stirring continuously until smooth. Increase heat slightly and keep stirring until thick, golden, and fudge-like. Stir in salt and pour over the cooled shortbread. Leave to set for 30 mins.

4️⃣ Melt chocolates separately. Pour the dark chocolate over the caramel, drizzle with white chocolate, and swirl into a marbled pattern. Chill until fully set.
