Every cup is measured and made to perfection. ☕️

When the coffee grounds are tamped, the water needs to force its way through the pile. This means that the water is interacting with the coffee longer and running through the entire cake of grounds. This combination of time and distribution results in a fuller flavor for the espresso shot.

Our pride and joy is our limited edition, speciality grade single origins, painstakingly selected for their unique and memorable inherent aromas.

SPOTLIGHT: ETHIOPIA SHANTAWENE

This is a WOW! coffee, a major highlight this year. Expect a clear, balanced and satisfying cup, with a pleasant combination of sweetness and acidity. It will appeal to those who enjoy complex coffees with a range of flavors and aromas, it shines in a pour over!

Features:
* Region: Bensa Woreda, Sidama
* SCA Score: 88
* Altitude: 2 000 - 2 400 MASL
* Variety: Heirloom 74158
* Process: Natural

Tasting notes: Passion fruit and crisp white grapes with a juicy body and medium acidity.

This lot comes from Tomas Graraoma, a former Sidama freedom fighter then civil servant who took over his father's land in 2011. His farm, Shantawene is located in the Bensa area of Sidama.

Unlike most smallholders in the area, Tomas processes his coffee at his own drying station which gives him full control of the quality, from harvest through to storage. He has a full time staff of just three and employs a further 40 during the harvest months of late September to the end of December. The main varietal Tomas grows is 74158. His coffee grows over a 4-hectare area under the canopy of native shade trees which keeps the soil fertile and rich in nutrients.

SPOTLIGHT: RWANDA GISHYITA LOT 17

We searched for, and found an experience. The Rwanda Gishyita washed has it all, complexity, sweetness and a syrupy body.

This versatile washed coffee can be enjoyed as a pour over, americano, espresso and flat white.

Features:
* Region: Karongi, Western Rwanda
* SCA Score: 84
* Altitude: 1 800 MASL
* Variety: Red Bourbon
* Process: Washed

Tasting notes: Honey, maple syrup, apple & pomegranate. Syrupy body and complex acidity.

This tiny washing station, located in the Kigarama cell within the Karongi district, lies on the slope of a mountain looking west across Lake Kivu toward the hills of Congo in the distance. Near to the small town of Ngoma, the station was built in 2010 and acted a cooperative, and was fully established as a washing station in
2018. The station employs 6 staff full time with the addition of 80 seasonal
workers during the season, 90% of which are women. 995 local farmers rely on Gishyita for cherry processing.

The average farm size is 3 hectares, with all farms within a 5km distance.
Farmers are serviced by 6 collection points and are provided with organic compost which is produced on the station from recycled cherry pulp, with lime and molasses added.

Gishyita is also one of the cleanest and well-maintained washing stations in the area. Unlike other stations whose washing channels are just painted concrete, Gishyita's washing channels benefit from being covered in porcelain tiles.
