Michel Roux says that the front of house is as important as the kitchen.
His "Maitre D'Hôtel, Sommelier" - Simone Galiazzo, and his Assistant - Piotr Marszalek, has welcomed and given a real service experience "A La Française". They have taught their "savoir-faire" to the young vietnamese team over the past 3 years.

Michel Roux has given the chance to Bastien Lhabitant to express himself as a Sous Chef for La Maison 1888.
He focused on the research and development of new dishes with creativity and a great sense of art.

Michel Roux has let the commands of his kitchen to Head Chefs understanding and sharing the same taste for classical french cuisine.
The Head Chef, Stéphane Colliet is proud to have contributed to the success-story of La Maison 1888.

Michel Roux, Meilleur Ouvrier de France Patissier 1976, is always giving challenges to his Head Pastry Chef - Stéphanie Aubriot -

She is very grateful to had run the Pastry of La Maison 1888 and to teach the base of french pastry to her team and to the students at cooking classes.

3 years ago, the 12/12/12 was the beginning for us of an exceptional gastronomic journey. A great challenge to introduce the French High-Gastronomy and Chef Michel Roux Spirit - 30 years of 3 Michelin Stars - to Vietnam and all around Asia.
Day after day, we have taught and transmitted our passion to our Vietnamese team. Today, our young chefs are comfortable cooking french cuisine and our waiters learned the excellency of Services "A la Française".
It is now time for Michel Roux and his management team to prepare for a new challenge ...

Il y a 3 ans, le 12/12/12 commençait pour nous tous une aventure gastronomique exceptionnelle. Un véritable challenge d'introduire la Haute-Cuisine Française ainsi que l'esprit du Chef Michel Roux - 30 ans de 3 étoiles Michelin - au Vietnam et en Asie.
Jour après jour nous avons enseigné et transmis notre passion à notre brigade vietnamienne. Aujourd'hui, nos jeunes cuisiniers et serveurs ont su acquérir les bases de la cuisine et du service à la française.
Il est desormais temps pour Michel Roux et son équipe de se tourner vers un nouveau challenge...
