Practicing my trofie and orecchiette. I love trying new shapes and I love trying to do it the way grandmas do over in Italy. I am by no means the expert but I do appreciate the art, the amount of time and the love put into each shape. When I make pasta like this im able to connect with myself and clear out the mental noise.

Ravioli special this week is a blast from the past,mini sausage and pepperoni hot pocket filling! These pouches pack a punch of flavor and memories of when we grew up!

Weekend special coming to all my markets this weekend so come visit! Pickled ramp and potato Culurgiones! There isnt a single machine on the planet that can replicate these beautiful handwoven pasta. Each one is meticulously made so that you the consumer can enjoy! This shape represents a few ideologies to me:

1. It is a work of art
2. The shape is meant to represent the wheat harvest (if you look at the fold it looks like a whear stalk)
3. This was the most difficult shape for me to learn, but once I learned it if fell in love with it.
4. Its history! I will never master every single shape in pasta across the world (trust me theres alot) but I can truly appreciate where they all came from and where they started.
5. Love! To make this shape takes time, dedication and determination, so if they made this shape for you they really like you haha.
