Bundt pan chicken! If you’re only using your bundt pans for cakes, you haven’t been living my friend. It makes a deliciously tender bird with perfectly cooked veggies in one fancy dish. I used my 12-cup Nordic Ware Anniversary Bundt pan. Be sure to cover the hole in the middle with aluminum foil- this is key! Lightly oil the pan and fill the bottom with potatoes, carrots and herbs. Sit the chicken on the center of your pan and add on your rub or seasonings of choice. I used a combination of mayo, dry ranch dressing mix, pepper and paprika. Bake at 425°F for an hour or until the chicken breast reaches 165°F. Would you try it?
