Around the holidays, there’s a lot of advice coming around from “health experts.” One of them that I would like to squash is the idea that “carbs are bad for you.” This idea has persisted for years, perpetuated by the Atkins diet and was carried on by its successor, the Keto Diet. Though many people can lose weight by “cutting carbs,” they aren’t bad for you. You can lose weight by omitting entire macros or food groups or in any way that creates a caloric deficit. But that does not make it a healthy diet. In fact, carbs are essential to a healthy diet. It just depends on where you are getting them from. The world’s most health-promoting, disease-fighting foods - veggies, fruits, legumes, whole grains - are high in carbohydrates. However, when you refine them into flours, sugars, and all of the processed foods that are devoid of fiber, vitamins, minerals, and phytonutrients, then they can cause issues. The carbs from a lentil stew are quite different from the carbs found in a candy bar. As always, when you enjoy a whole food, plant-based diet, focusing on the most wholesome ingredients possible, carbs are not at all a problem. 🌱💚 With leafy green love, Julieanna Hever
