Sir Richard's 3rd and 4th Loaf!

so far the best tasting loaves I have made this sourdough journey🥰

2 cups active bubbly starter
3 1/2 cups lukewarm filtered water
about 10 cups flour
a tablespoon or so of salt (to your liking)
a heaping tablespoon of sugar

Stir water and active starter until mostly combined, then begin stirring in flour by adding a cup or so at a time.
Once you have mixed a couple cups in... now is when I'd add the sugar and the salt. Then slowly incorporate flour until you get a nice shaggy dough. Try not to overmix. you want it mixed enough to where there are no dry flour spots but no more. Dough should be shaggy and slightly sticky.
Let proof/rest for about an hour before you begin stretch and fold process.

Once dough has rested for about an hour you want to start the first stretch and fold. Start by taking a dough scraper or your bare hands and grab one side of the dough up and pull gently, then fold over like a taco. Repeat the 4 more times then let rest for 30 minutes before repeating the process. You want to do this about 4 times (taking about 2 hours (stretching and folding every 30 minutes)).

Once the last stretch and fold is done... let it rest for another 30 minutes to an hour. After resting, take the dough out of the bowl and split in half evenly to make 2 loaves.

Do the following process with each half of the dough. Press the dough out into a rectangle (flour helps during this process preventing the dough from sticking to dough mat or hands) Fold the dough into 3 like you're folding a paper to put in an envelope. Then starting from one end, tightly roll the dough into a loaf.

You can either put the loaf in a loaf pan or a Dutch oven. I do loaf pans since I dont have a Dutch oven. Put the loaf pans back in the oven to proof until the middle of the loaf is just above the top of the pan.

Take the loaves out. Preheat the oven to 425°F. Once the oven is preheated cut whatever designs you please into the top of the loaves.

Grab a sq**rt bottle of filtered water. If you have a deep bottom oven or a metal deep pan then put the loaves onto a rack above the deep pan and sq**rt a good amount of water into it. DO NOT DO A GLASS PAN.

Set the timer to 30 minutes and every 5 or so minutes sq**rt water in there until the last 10 minutes to allow the crust to brown.

Once done remove the loaves from the oven. You'll know they're done if they sound kind of hollow on the inside when you knock on it. Let the loaves rest 10 minutes before removing them from the pans to a wire rack. Let the bread completely cool before cutting and eating 😋.
