Bariatric-Friendly Crab Rangoon Wonton Cups
Light, crispy, and packed with protein, these baked bites are a smart twist on the takeout classic. Perfect for gatherings or a personal treat.

Ingredients:
- 12 wonton wrappers (find them in the produce section)
- 2 tsp peanut oil
- 6 oz shrimp
- 4 oz reduced-fat cream cheese
- 4 scallions, minced
- 1 tbsp roasted red pepper (from a jar)
- A few drops of Tabasco
- Sea salt and black pepper, to taste

Instructions:
1. Preheat oven to 375°F.
2. Brush wonton wrappers lightly with peanut oil and press into mini muffin tins.
3. Bake for 12–15 minutes until golden and crisp.
4. Mix shrimp, cream cheese, scallions, red pepper, Tabasco, salt and pepper.
5. Spoon filling into baked wonton cups.
6. Return to oven for 4–6 minutes, until filling is warmed through.
7. Pair with a sugar-free dipping sauce and enjoy!

Dr. Jeff Monash was honored as a Tucson Hero at the quarterly Hero Breakfast, a community event recognizing individuals who exemplify service, courage, and compassion.

Dr. Monash, founder of Tucson Bariatric and the Wound Center of Tucson was the event’s first-ever medical honoree. He was recognized alongside heroes from three branches of the U.S. military and Andy Cathey, brother of co-founder Matthew Crandell.

Adding a deeply personal note to the event, Gordy Siewert, a patient of Dr. Monash, was welcomed as the featured community speaker. Gordy’s words about strength, healing, and gratitude moved the room, underscoring the profound bonds that can form between patients and their physicians.

These egg-in-Bell-Pepper Rings are perfect for bariatric nutrition with high protein, gut-friendly, and healing-focused.

Ingredients:
- 1 red bell pepper
- 4–5 large eggs
- Salt & pepper
- ¼ cup grated Parmesan cheese
- 1 Tbsp olive oil

Instructions:
1. Heat olive oil in a non-stick skillet over medium-high heat.
2. Slice bell pepper into 4–5 rings (about ½” thick) and remove seeds/centers.
3. Sauté pepper rings for 1 minute.
4. Crack one egg into the center of each ring, pouring slowly to avoid leaking.
5. Season with salt and pepper.
6. Cook for 3 minutes, then flip carefully.

Top with Parmesan cheese and serve warm.

Wraps → Romaine, cabbage, or collard greens
Rice → Riced cauliflower or parsnips
Pasta → Zucchini noodles or spaghetti squash
Chips → Sweet mini peppers
Pizza crust → Cauliflower, meat-za, or veggie boats (bell peppers, zucchini, eggplant)
