Apparently I wanted to spend the entire day in the kitchen, two batches of pickles going at different stages and tallow in final rendering stage. We did a combination wet rendering with multiple filtering to achieve the purest tallow we could. I do believe we succeeded!

For the first time we had our beef officially graded and it came back as Choice! Wow! We are blown away. We love providing quality meat and are so thankful to East Texas Beef Processing for the fine job they did butchering and packaging our beef!
