How did you onboard employees during the pandemic?

In response to COVID-19, businesses were permitted to complete the full onboarding process for new employees online - which, for most of us, included authenticating the Form I-9 virtually. Beginning 8/31, USCIS is requiring employers go back and complete additional steps with employee's whose forms they completed virtually.
