Week 2 of seasonal camping at Erie Landing was packed with food trucks, trivia, games, new friends, and one very competitive Gameshow Weekend.

From hibachi and ice cream trucks to Family Feud-style competitions and trivia night, there was something happening all weekend long.

One thing we’ve learned quickly about Erie Landing is that weekends here aren’t just weekends… they’re events.

We also discovered that Yori is fascinated by crawfish, Aaron Hopkins dropped by for a visit, and somehow James and I managed to climb from 7th place all the way to 2nd during trivia night.

Not bad for a couple of washed-up road hippies.

Hopping The Trails With The Hopkins Resort at Erie Landing

James is a master at making CRISPY bacon. He swears the trick is to put it on the grill cold, then lite it, and cook it LOW and SLOW. It takes an hour to cook but we do have the best bacon! 🥓

Modify some of our favorite recipes for higher protein! We have made a focus on our health this past few months with the help of our partners at Brello Health . I am switching up a few basic ingredients on some of our favorite meals starting with this Zesty Pasta Salad that is one of James’s favorites. It goes moderately well.

After 5 years on the road, we're parking the RV for the summer.
