CHICKEN AND RICE IS ALWAYS NICE!

I marinated these chicken drum sticks in toasted sesame dressing. Then baked them for 30 minutes at 400°F. Meanwhile... I mixed chopped mushrooms, diced red onion, chopped Brussels sprouts, rice wine vinegar, soy sauce, and egg with leftover garlic herb brown rice to make a very yummy fried rice.

EASTER DINNER
My bestie hasn't been physically able to go anywhere except doctors appointments for several weeks. I decided to make Easter dinner at her place this year. Her grandson (my chosen nephew) was visiting and my hubby rounded it out to a lovely party of 4.

💙 Baked Lemon Pepper Chicken Thighs
💙 Mashed Potatoes
💙 French Cut Bacon Green Beans
💙 Tomato Cucumber Salad
(with and without Italian dressing)

🔍🧐🔎 BOLO to see what we had for dessert.

I got caught playing around with salad again. 😆
For this SESAME BEEF SALAD I browned ground beef with salt, garlic powder and onion powder and then I chilled the cooked beef. Now for the veggies! My hack for this salad is pretty cut tri-colot coleslaw veggie mix. Next time I will be adding shredded carrots because there is never enough in the bag. I also small diced half a red onion and 2 small red sweet peppers. The final veggie is some finely cut broccoli. After the beef was chilled I mixed it all together with a ready made sesame dressing that we had left over from something else. I ate some that night after I made it but it sure tasted better a couple days later after all the flavors melded together.

PEA & BEAN SALAD but make it protein packed, southwestern, and greener.

The second photo has all the ingredients. I also added salt and cumin to taste.
