We’re closed to the Public on Tuesdays, but there’s still a lot of activity here at Pastry Pants.

Having a dedicated prep day each week gives us an opportunity to do things like hand slice the Italian ham we use in our baguette sandwiches.

This is how sourdough batard is born.

Dough is cut, hand shaped, scored, and rested before baking. Then, it goes into our special bread oven, which keeps at both the correct temperature and humidity.
