Give me all the good vibes and all the fall vibes! Once temps finally started to feel a little cooler around here, we went straight to this one! ๐ฅ๐ And if youโre looking for a little comfort in these crazy times ๐คช, look no further than a warm bowl of this butternut squash soup! We recently went through a batch at our house (for those following, you saw this in stories) and paired it with meatballs one night, and even tried it topped with shrimp on another night - delicious! ๐ค๐

As a girl with Texas roots in her blood, I grew up knowing about Juneteenth way before it was ever declared a National Holiday. And to be honest, the truth behind the story has always saddened me more than given me reason to celebrate. But one day, a new perspective came to mind! Iโll never forget the day I was driving home from work and the dedication for Meals You Deserve came to mind like a bolt of lightning! It immediately even brought tears to my eyes because, while a simple sentence, the statement holds so much weight and causes one to acknowledge all of what it speaks to: 1) the foundation, literally and figuratively, of many of the nutrient-rich foods and dishes that we eat today, 2) the creativity of recipes made from โscrapsโ that are now cherished, treasured, passed down, and even listed on some of the finest restaurant menus, and 3) the empowerment of being able to return to foods grown on land once worked by their barehands and find delicious solutions to health issues 4) to now be able to prosper from itโฆ its as if itโs a beautiful return on their forced investment. I do not take this freedom for granted.

Oh hi there! Long time no feed post. Lately itโs been so much easier to post on Instagram storiesโanybody else suffer from โfeed post fearโ? Thatโs a โstoryโ for another day. ๐คฃ
This was my grandson and I at one of my recent โcake showsโ (as he calls them) doing what he lovesโeating up the pound cake samples.

LEFTOVER ROAST CHICKEN/TURKEY SOUPโจ Yesterdayโs roasted holiday bird [or rotisserie chicken as Iโve done as well] makes this quick & delicious soup taste like you spent hours! ๐๐ค๐ฝ
INGREDIENTS:
๐ฅ2 carrots, chopped
๐ฅ1 medium zucchini cut into ยฝ inch thick slices
๐ฅ8 oz chopped portobello mushrooms
๐ฅ3 garlic cloves, 2 chopped & 1 crushed
๐ฅ2 T kosher salt
๐ฅ64 fl oz chicken broth
๐ฅยฝ a leftover roasted chicken or Turkey
๐ฅยฝ lemon
๐ฅoil for sautรฉing
DIRECTIONS:
๐๐ฝHeat oil in a Dutch oven or large pot.
๐๐ฝAdd the chopped carrot, zucchini and mushrooms to the pot. Season with approximately ยฝ T of your salt, or as desired.
๐๐ฝShortly after, add your garlic and remaining salt.
๐๐ฝContinue to sautรฉ and stir until everything is well combined.
๐๐ฝNext, add your leftover roasted chicken or turkey meat to the pot and then cover with your broth.
Give everything a stir until well combined and bring the soup to a boil.
๐๐ฝReduce the heat to a simmer. Let the soup simmer for 20-30 minutes, stirring occasionally.
๐๐ฝAt this point, you have the option of removing the chicken pieces and shredding the meat off to put back in the pot, or you may leave the pieces in whole. Personally, I donโt mind leaving the chicken parts in whole with the broth. Depends on preference.
๐๐ฝSqueeze juice of the half lemon over soup.
Ladle the soup into bowls and serve warm.
๐๐ฝFeel free to add more salt or freshly-squeezed lemon juice individually as desired. Enjoy!

EASY 3-INGREDIENT AIP PUMPKIN SPICE BLEND! ๐๐ฅงโจSo, Iโm somewhat passionate about spices and herbs. So much so that I even have an entire Pinterest board dedicated to just spice blends (the board is called โSpice Spice Babyโ for anyone interested lol).
Anyway, this recipe derives from a need for an AIP-friendly pumpkin pie spice blend that is nightshade, berry, AND seed-free which also uses spices Iโve found to be fairly easy to find at most local grocers. Not to mention, many of them are probably already in your pantry/seasoning shelf. It is a simple yet flavorful spice blend, and one that will easily become an easy go-to staple to โspice upโ your holiday dishes and baked goods (and donโt forget about simple sides like baked/sauteed apples or squash that you could add this to)!
Optional: Use this blend as a base and add mace, which is also AIP-compliant, OR vary the measurements as desired to your preference. Happy (almost) Fall yโall!!
INGREDIENTS:
โซ๏ธ3 tablespoons cinnamon
โซ๏ธ2 teaspoons ginger
โซ๏ธ1ยฝ teaspoons clove
INSTRUCTIONS:
In a small bowl, mix together cinnamon, ginger and clove. Store in an airtight container. Enjoy with all your favorite spiced treats & dishes!

PINEAPPLE MANGO SMOOTHIE POPS!!! ๐๐ฅญโจ I dedicate this recipe to all my peeps in Cali where the temps have been in the triple digits and not letting ๐๐ฅต๐โฆNeed a sweet treat to cool down from the heat? Made with only a few simple ingredients, these luscious pineapple mango smoothie pops make for the perfect summer treat for the whole family (I personally tested and theyโre kid-approved). As a time saver, you can use thawed out frozen fruit. Makes a dozen pops!
INGREDIENTS:
๐ฅญ16 oz chopped mangoes about 2 cups chopped
๐ฅญ 16 oz chopped pineapples
๐ฅญ 1 C water
๐ฅญ 1 lime, the juice of
๐ฅญ 2 tbsp honey, or more as desired
๐ฅญ ยผ tsp turmeric
DIRECTIONS:
In a high speed blender, add water first. I prefer to place liquids first as it seems to make for better blends.
Next, add remaining ingredients and blend on high until you have a beautiful, silky smoothie texture!
Pour smoothie mixture into your popsicle molds and allow to freeze for an hour before inserting popsicle sticks.
Continue freezing for at least 5 more hours or overnight. Enjoy!
