🧀 ‘Dirt Lover’ Dirt lover is a bloomy rind sheep cheese with a light coating of vegetable ash. This Green Dirt Farm original recipe sheep milk cheese is similar to a Selles Sur Cher or Caña de Oveja. Applying ash to the rind of cheeses is an old-world cheese making technique helping to neutralize the pH of the rind, encouraging the desired rind formation. The dark line from the ash makes Dirt Lover a striking addition to a cheese plate. Dirt Lover is a Green Dirt Farm original recipe. It’s one of a very few soft ripened sheep’s milk cheeses made in the US.

Dirt lover tastes buttery, lemony, and mushroomy, and becomes earthy and beefy with age. It smells of wet dirt, like working in the garden.

This cheese pairs well with rosé, wheat beer, and dried apricots. Dirt Lover makes a wonderful salad with citrus quarters, walnuts, fennel, and a simple vinaigrette.

🧀Bayley Hazen Blue - : a raw cows milk. Fudge like texture, toasted-nut sweetness, Anise spice character, subdued blue flavor. Pairs well with a fruity dessert wine & imperial stouts.

Salers Aperitif: Salers (pronounced Sah-ler) is a classic, bittersweet French apéritif made from yellow gentian root. Originating from the Massif Central in 1885, it boasts an earthy, herbaceous, and rustic flavor profile with subtle hints of citrus and anise. Notably, it is bottled at 16% ABV, setting it apart as a less sweet and more dry alternative to its competitors.

New Tasting Board is here! ✩ The Alpage Board

When herds move to high pasture, the milk changes—and so does the cheese. This board celebrates that season.

🧀 Featuring Gruyùre AOP (Switzerland, aged 12 months) and Pleasant Ridge Reserve from Uplands Creamery in Wisconsin—made only when cows are on pasture.

đŸ· Add a three wine flight if you’d like.

If you’re curious, come by and ask—we love ❀ sharing what’s on the board.
