Tonight at The Railyard - Springfield, IL is our Taylor Swift night and Im just as excited about it as I was for our pop/punk emo night! I have my Taylor shirt on (it's old, doesn't have The Life of a Showgirl on it lol) and will be jamming to allll the hits tonight! Bring your friendship bracelets and come have a great time 🥰 the DJ is also giving away a Taylor Swift themed pink guitar!!

A couple of s'mores specials for tomorrow nights s'mores event at The Railyard - Springfield, IL !

First up is a s'mores cheesecake bar 🤤 - a traditional graham cracker crust, chocolate chip/marshmallow cheesecake, a homemade toasted marshmallow and ganache drizzle

S'mores brownie - my usual chocolate brownie topped with graham cracker buttercream, toasted mini marshmallows and more ganache 🤤🤤

As always, specials are available while supplies last!

*note: I am planning on a smores shake too BUT my ice cream distributor shorted me on the s'mores ice cream so I'm in talks with them to get it to me by tomorrow. I have a back up plan for it if I can't get it but just being transparent!!*

Since I've crossed over to 1,500 followers I wanted to do a little reintroduction and some frequently asked questions!

My name is Kaitlan and have owned Best Day Ever Bakeshop since May of 2025. I specialize in custom cakes, cookie cakes, cupcakes and many different kinds of desserts! I've been decorating custom cakes for over 10 years now and have worked in a couple of other bakeries before opening my own spot 🥰

Some FAQs:

Do I have a storefront?
- Nope! I am solely on wheels and located at The Railyard - Springfield, IL every day they are open. I have a pastry case full of a variety of options AND tons of ice cream options!

Can I take my truck to events?
- Yes! I am committed to being at The Railyard for the season so if it works out to where I can on a day we are closed I sure can!

Do I do gluten-free?
- Yes! As special orders! I offer vegan, dye-free and sugar free options for certain desserts too 🥰

How long do I need to place an order?
- I prefer a minimum of 2 weeks but depending on other orders, I can take more last minute orders. Pleeeease try to not do so last minute where it's needed by the next day 😬 I make all my pastries and cakes from scratch so I dont just have random cakes available all the time and it takes time!

What are your hours?
- Wednesday and Thursday 4pm - 8pm, Friday 4pm - 9pm and Saturday 11am - 9pm.

Why the name Best Day Ever Bakeshop?
- Best Day Ever is named for my late husband who said the day we met was the "Best Day Ever"! He passed away before I opened this so it is named in honor of him!
