Hi everyone!
Thanks for following me on Springfield Bites and supporting my fun little side project. I love exploring Springfield and trying all the yummy foods and while I'm still out trying new things, I get behind on posting. Life is BUSY and I wanted to share why --
I'm opening my own mobile candy shop!!
The idea actually came from a work trip. I’ve always dreamed of owning my own business, and it originally started as a food truck idea — but then I walked into a candy store in Toledo, Ohio and had a realization that maybe I was meant for the candy world.
What started as a fun idea is turning into a mobile candy shop operating out of a camper, popping up at events, festivals, and community gatherings. Think viral sweets (Swedish candy is the main focus) and other fun nostalgic and yummy items.
This has been a huge leap of faith, and I couldn’t be more grateful for the love and support I’ve already received. I can’t wait to share this journey with all of you and hopefully see some familiar faces at our pop-ups very soon!

I know, I’m disappointed too.. I FAILED at the 12 Days of Christmas. Life somehow always gets in the way, imagine that!

The elves were too hard at work and forgot to post day five, so….

Fire-roasted esquites that lived rent-free,
A burrito so big it deserved an encore,
Carne asada dreams were still craving more.
Then chipotle shrimp pasta sealed the night,
in Springfield doing everything right. 🎄

On the fourth day, let’s share a story:
‘Twas the night on the fourth day of Springfield Bites,
and all through the house, not a creature was stirring, not even a mouse.
The stockings were hung by the chimney with care, as Springfield Bites shared something tasty and rare.
From .bar it came, warm, cozy, and bright,
A dish full of comfort and holiday delight.
With flavors so good they stopped us mid-bite, proof that day four was a foodie’s delight.
So gather ‘round friends, pull up a chair, Springfield Bites and Harvest Kitchen—holiday magic to share. 🎄✨

I know, I know — I’ve been MIA for a while, but I come bearing gifts! 🎁 I’ve returned to release the hostages (aka the food pics i’ve been hoarding). I thought it would be fun to do a 12 days of food leading up to Christmas! 🎅🏻 Come to your Facebook feed hungry on Friday because I’ll be highlighting some of the places I’ve been to recently!

I only had the chance to visit Mom + Pop’s in Petersburg, IL once, but wow - it left a mark. Now I’m thrilled they’re bringing a new concept to downtown Springfield (or a beloved classic if you’re a Springfield native). The buzz is real - everyone’s hyped for the return on Long Nine Junction, and you can bet i’ll be one of the first in line to try it. Still dreaming about those biscuits and gravy on the regular tho. 💭

Cones and Rolls!!
This doesn’t even begin to show off everything I’ve ate at the fair so far but figured I should share these gems before the fair ends in case you wanna go try it!
Chaffle from Chavella’s Candied Apples - Crispy, sweet, crunchy, delicious! I didn’t feel like it was overly sweet and definitely a good amount for the price.
Stephanie’s Pork Belly from Mr. Pork Belly - I’ll be honest - I didn’t go in with super high hopes but I definitely wanted to try. I opted for the honey glazed because I figured it would be more tender and flavorful although I did see the other option and it looked very yummy (the pieces were huge). The honey glazed pieces were smaller but you got a good amount. While it wasn’t the most tender pork belly i’ve ever had, I definitely enjoyed it. There was a nice meat to fat ratio and the flavor was definitely there. I’d definitely recommend if you’re a pork belly fan in any capacity.
Soul Food Egg Roll from Egg Roll Love - While the soul food one is pictured, I’ve also tried the blasian and the seafood egg roll. Every single one lives up to my standards. SO good. I do wish I was able to taste more of the components in the soul food roll separately (collard greens, mac and cheese, and grilled chicken) it still didn’t pass on flavor. Also…. they’re a really good deal for the fair in my opinion… definitely bigger than your average egg roll.
Not pictured but 100% worth mentioning was the pork chop on a stick from the Pork Patio. I’ve gotten it twice now and feel like I need a third. It was huge and MELT IN YOUR MOUTH tender. You usually don’t expect that when you’re mass producing an item but has definitely been my highlight of the fair this year.
Heading out to the fair again everyday this weekend — any recommendations? 😀
