🍪🥧 PECAN PIE COOKIES — LITTLE COOKIES, BIG PECAN PIE FLAVOR! 🤎

If you love pecan pie, you NEED to try these! They’re buttery, soft, and loaded with a gooey brown-sugar pecan topping. Perfect with a cup of coffee! ☕😍

🍪 RECIPE

Cookie Base:

½ cup butter, softened

½ cup brown sugar

1 egg

1 tsp vanilla

1½ cups all-purpose flour

½ tsp cinnamon

¼ tsp salt

Pecan Topping:

1 cup chopped pecans

¼ cup brown sugar

2 tbsp butter, melted

2 tbsp maple syrup or corn syrup

1 tsp vanilla

👩‍🍳 HOW TO MAKE

1. Mix butter and brown sugar until creamy.

2. Add egg and vanilla, then mix.

3. Add flour, cinnamon, and salt. Mix until a soft dough forms.

4. Shape into 12 rounds and place on a lined baking sheet. Make a small indentation in the center.

5. Mix the pecan topping ingredients together and spoon into each cookie.

6. Bake at 350°F for about 12–15 minutes, until the edges are lightly golden.

7. Cool before serving—the pecan topping will set as it cools.

Turn them into crispy, cheesy potato bites with an insane cheese pull! 🤤

Recipe:
🥔 2 cups mashed potatoes
🧀 ½ cup cheddar + 1 cup shredded mozzarella
🌿 2 tbsp fresh chives
🌾 Flour + crushed cornflakes for coating
🫕 Oil for frying

Mix → shape into rounds → coat in flour and crushed cornflakes → fry until golden and crispy.

🍎🥧 Apple Hand Pies

Makes: 8 hand pies

Ingredients

Pastry

2 refrigerated pie crusts

1 egg, beaten, for brushing

Apple Filling

3 medium apples, peeled and diced

⅓ cup brown sugar

1 tsp ground cinnamon

1 tbsp cornstarch

1 tbsp butter

1 tsp vanilla extract

Pinch of salt

Glaze

1 cup powdered sugar

1–2 tbsp milk

½ tsp vanilla extract

👩‍🍳 Instructions

1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

2. In a saucepan, combine diced apples, brown sugar, cinnamon, cornstarch, butter, vanilla, and salt.

3. Cook over medium heat for 5–8 minutes, stirring occasionally, until the apples soften and the mixture thickens. Let cool.

4. Roll out the pie crusts and cut into 8 equal rectangles or circles.

5. Place a spoonful of cooled apple filling in the center of half the pieces.

6. Cover with the remaining pastry pieces and press the edges firmly with a fork to seal. Cut a few small vents on top.

7. Brush with beaten egg.

8. Bake for 20–25 minutes, or until puffed and golden brown.

9. Cool for about 10 minutes.

10. Mix powdered sugar, milk, and vanilla until smooth. Drizzle over the warm hand pies.

🍎 Tip: Let the apple filling cool before assembling so the pastry stays flaky and easy to handle.

🍓 Raspberry Lattice Pie

Ingredients

Pie Crust

2½ cups all-purpose flour

½ cup granulated sugar

½ tsp salt

1 cup cold unsalted butter, cubed

5–6 tbsp ice-cold water

1 tsp vanilla extract

Raspberry Filling

4 cups fresh raspberries

¾ cup granulated sugar

3 tbsp cornstarch

1 tbsp lemon juice

1 tsp vanilla extract

Pinch of salt

For the Top

1 large egg, beaten

1 tbsp milk

1 tbsp granulated sugar

👩‍🍳 Instructions

1. Make the crust: Whisk flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough just comes together.

2. Divide the dough into two portions, flatten into disks, wrap, and refrigerate for at least 30 minutes.

3. Make the filling: Gently combine raspberries, sugar, cornstarch, lemon juice, vanilla, and salt.

4. Roll out one dough disk and place it into a 9-inch pie dish. Trim the edges as needed.

5. Pour the raspberry filling into the crust.

6. Roll out the second dough disk and cut it into strips. Arrange the strips into a lattice pattern over the filling. Crimp the edges.

7. Mix the beaten egg with milk and brush it over the crust. Sprinkle with sugar.

8. Bake at 425°F (220°C) for 20 minutes, then reduce the temperature to 375°F (190°C) and bake another 35–45 minutes, until the crust is deeply golden and the filling is bubbling.

9. Cool completely for at least 3–4 hours before slicing so the raspberry filling can set.

🍓 Tip: Place the pie on a baking sheet while baking to catch any bubbling filling. For the cleanest slices, let it cool completely before cutting.
