We get asked all of the time: “Does honey go bad?”

Store honey in a sealed glass or ceramic jar at room temperature FOREVER (plastic containers will leach chemicals into your honey)

Pro tip: Using a wooden spoon or honey stick is always recommended over a metal spoon because it is the best way to keep all of the natural goodness of the honey preserved.

An update on the 🐝
Beau has started supering- this is the process of stacking extra boxes in the hives in preparation for honey production.

Fun Fact.
Bees communicate with each other through a dance known as the "waggle dance." When a bee discovers a good source of nectar or pollen, it returns to the hive and performs a series of movements that indicate the direction and distance to the food source. Other bees in the hive interpret this dance and use the information to locate the food. It's like a built-in GPS system for bees!

The wildflowers are just about to start popping around here.

This is a honey bee. The pollen on her legs is from dandelions.Her tongue is sticking out due to what killed her that was on the dandelions. It's spring, dandelions are the bees first food. This bee is dead from w**d killer spread on what we see as w**ds, but what nature sees as food. Please don't spray for w**ds until vou see the blackberries blooming. In this area, w**ds, flowers and fruit trees are bees only source of food until midle of June. There are FAR more w**ds than flowers or fruit trees, so it's their only food source. No bees, no food crops for us and we all starve.

Mediterranean antipasto loaf (Jam-packed with flavor!)

Large loaf $20 - (I only have 1!) will easily feed 12+ people as a Super Bowl Party snack

Small loaf $10- (I only have 1!) will feed 6-10 people as a party snack

Yesterday we set out to make a new flavor of bread. Did you know that when you enrich (add a bunch of extra stuff) your dough it needs extra time to proof? The loaves I usually make proof for between 3-8 hours depending on the type.
This Mediterranean olive loaf (we need a better name because it’s got more than olives in it) took 20 HOURS to proof.

What do we do to proof it? Cover it with plastic wrap, set it on the counter out of the way, and check on it until the dough has doubled in size.

Fun Fact: When the recipe calls for sugar, you can substitute honey- Just cut the measurement in half.

Use 1/2 tsp honey

As the rain returns this fall, please consider leaving the wildflowers alone (don’t mow them down) as these are a source of food for our winter bees.
Goldenrod is prevalent out this way and doesn’t taste all that great in honey form, but the bees need it to survive this winter.
