After attending my first workshop, I was instantly hooked! In less than 2 hours we made 10 delicious recipes to take home. How refreshing.

Chicken salad sandwich. Take some chicken and shred it (or use a can of chicken if that's what you have) and add a some Smoked Mozzarella and Tomato blend with a little mayo. Add some lettuce and put on bread or in a wrap for a great tasting and easy to make lunch.

Perfect Roast Chicken from the Everyday Meals menu, and it was perfect! I don't think I have ever roasted chicken quarters before, but it was so flavorful that even now a half hour later after the one dish that I used to make dinner has been washed, my mouth is watering just typing this. Can't wait for leftovers if no one else gets to them first.

Next time I may just go with thighs, since I prefer the dark meat, but to each his own.
