You can't beet local!

Let's be honest... beets tend to be one of those vegetables you either love... or politely push to the side. 😄

The first time I willingly ate a beet, I was surprised and delighted by the sweet and earthy flavor. I'm on a bit of a mission to find new ways to prepare market-sourced dishes that any guest can enjoy.

This Raw Golden Beet Salad features a lemony-Dijon vinaigrette and is one part salad, one part slaw, packed full of flavor, crispy-crunchy texture, and can be made ahead of time to make gathering with friends and family a bit simpler.

How to Clean Leeks (and my favorite way to use them)| Leeks are those large, green-onion looking stalks sometimes overlooked because they’re not often used in day-to-day cooking in a lot of kitchens. Until now, of course! They’re sweet and deep in flavor, a bit more subtle on the onion-y scale, and add really delightful notes to a dish.
