Turkey Day 2023 🦃 😋
Brined and smoked 7 fat turkeys, and smoked a brisket. It was a long day but worth it for our friends who I’m incredibly thankful for.
Seasoned all the turkeys with Dizzy Pig Seasonings Wonder Bird, and the brisket got a combo of their Red Eye Express and Raising the Steaks. Then smoked them in my 270 Smokers Memphis.
It was a long process and a busy day, but a smooth cook and everything was delicious.

Pizza! Ooni! 😋

We purchased a Karu 16 last Summer (June 2022) and fell in love with it. Even cooking through our mistakes, these are some of the best pizzas we’ve ever tasted. (I should have posted this sooner, but I haven’t been on Instagram for awhile.)

Hog Tied Ribs with a homemade smoked pepper honey glaze. 😋

My friend, Duane, gave me some of his rubs to try. I made 3 racks with Hog Tied rub and they were a huge hit.

Pastrami Picanha!
It’s pastrami season and I’ve been on a picanha kick this year so it seemed like the perfect marriage. 😋
I also served a brisket point pastrami for comparison. It was all devoured!
(There was also salmon pastrami, which everyone loved but it wasn’t so photogenic.)

Zoinks BBQ!
My friend, Duane, started experimenting with bbq flavors and developed his own line of rubs and sauces. We setup a tasting for some people to eat bbq and give us feedback.
They loved it! (We were so busy serving that we didn’t get good pics of the event.)
He has 10 rubs and 4 sauces, each of them unique and full of real flavor, and not too salty or overwhelming.
I did a wing sampling to compare his Nashville Hottie and Original Hot rubs. Both pack a punch and are awesome on smoked wings.
His sauces are amazing! Boarhemian Rhapsody won the day on the ribs, and Mama Knows Best was the go-to sauce for pulled pork.
Duane is definitely onto something grand with his Zoinks BBQ rubs and sauces! I need more, and we’ll definitely do another cook soon.

Cooking for the weekend!

Huge shoutout to 270 Smokers! Terry and Stephanie West are wonderful people and they make outstanding smokers!

I have the Memphis going with 2 brisket pastramis, 8 butts, and 2 pans of beans. It has plenty of room, holds temps perfectly, and delivers the smoke! And as a bonus feature, it rolls around super easily. I love it!

Hawaiian Burger!
Shout out to shipwreckbbq for this inspiration! He has several excellent posts about Trybachans Japanese Barbecue Sauce, and while I was in CostCo this morning I saw it and had to try it.
The inspiration hit me for hamburgers with pineapple, along with grilled shrimp and corn on the cob, all grilled on the Egg. I figured I’d stick with the theme, so I went with Dizzy Pig Seasonings Peking on the burgers, Spicy Pineapple Head on the pineapple (duh), and Tsunami Spin on the shrimp and corn. And everything got a hit of the Japanese Barbecue Sauce. 😋
I didn’t intend for this to turn in an AAPI meal, but it worked out perfectly! Some fun flavor combos and I’ll be doing it again soon.

Easter Burger!
We were planning to make burgers for Easter dinner and my wife wanted deviled eggs… then she came up with this idea. Similar to a farm burger with a fried egg, it’s a deviled egg burger. 😋
To kick it up a notch, she made the deviled eggs with Wickles (spicy pickles). It totally works and it’s a definite repeat.
