Sheet Pan Quesadillas!
Ingredients:
1 Cup Guaranteed Foods Fajita Blend Vegetables
1 Cup Guaranteed Foods Roasted Sweet Corn & Jalapeno Blend
2 Cups Guaranteed Foods Southwest Style Fiesta Blend Rice
1 Lb. Guaranteed Foods Chicken Fajita Meat (pre-cooked)
8 large burrito size tortillas
2-3 cups shredded Mexican cheese
1 Tb. olive oil
1 Tb. taco seasoning
Garnishes like: lettuce, salsa, guac, sour cream, cilantro... etc.
Warm the vegetables and chicken in a pan, sprinking taco seasoning on chicken.
Grease baking dish with 1 tsp olive oil and arrange tortillas as shown in video.
Spread chicken and veggies evenly on tortillas and top with cheese.
Fold tortillas as shown in video and top with clean baking dish.
Bake at 350 for 35 minutes. Then remove the top baking sheet and bake for an additional 10 -1 5 minutes until the tortillas are nice and crispy.
Cut into rectangles and serve with your favorite garnishes.
