Well here it is folks, this is Smoke-N-Simmers catering menu. π€€ We have always done custom menus in the past as every event is different, but the demand is there, and it makes sense to give everyone an idea of what a base package looks like. We are still thrilled to do custom orders and events, but there is always this if you just want some BBQ and don't need a personalized menu for your event. π π π

Back at it again with some
smokey deliciousness. π This time we went a little outside of the box and decide to do BRUNCH!!π
-First we have a variety of smoked bacon wrapped & cream cheese stuffed jalapeΓ±os. Individually stuffed with either sausage, brisket,
or strawberries π
-The remaining images are a combination of the jalapenos and smoked brisket hash, sunny side up eggs, and a decadent vanilla brioche french toast topped with either a blueberry and bacon compote or a strawberry cream cheese spread.
All was FABULOUS π

We did a major round of BBQ-ing this last weekend π€€
-To start things off we smoked and seasoned some chicken wings and drums. When I tell you these didn't need sauce, I mean it!π They were perfect.
-Next it was a rack of delicious spare ribs! These ribs were so tender, and they didn't get sauced because they needed it by any means. But we do enjoy some good BBQ sauced ribs.
-Last but definitely not least, we decided we were overdue for a good brisket. This brisket turned out sooooo good. Juicy, tender, and slow smoked for 16 hours.ππ¨βπ³ (The tacos are full of brisket and our signature Sriracha Slaw.)π―

We went with a Chinese takeout theme this week π₯‘π
Appetizerβ
-Wonton tacos, filled with braised skirt steak and a ginger, broccoli, sweet pepper, and cabbage slaw. We then topped these with pickled red onions and sweet peppers. Lastly, we finshed them off with chili marinated smashed garlic cloves. π€€
Main Course β
-Honey walnut grilled chicken thighs over jasmine rice, and served with ginger and teriyaki marinated broccoli florets π₯¦
Dessertβ
-Ginger and basil infused Creme Brulee, topped with homemade blueberry compote π«πΏπ«

Welp..... here's another fantastic creation of Justin's π This time it's our take on some Italian fare
- Roasted red pepper, fresh strawberry, basil, and honey whipped goat cheese bruschettaΒ π
- Roasted garlic and parmesan brussel sprouts

- Stuffed giant shells filled with smoked pulled pork, spinach, basil, garlic, smoked gouda and cream cheese π€€

Our hiatus is over!! We are back to cooking, and as the seasons have changed since the last time we did a post for Smoke and Simmer, we decided to do something that felt in line with autumn. π
-Pan seared pork tenderloin medallions, topped with fried Kale, sweet peppers, and bacon and then drizzled with a soy, garlic, and honey reduction π€€
-Homemade sweet potato gnocchi (these pillows of potato heaven were worth every bit of effort) on top of a basil and herb whipped ricotta π
-Roasted Broccoli
-Chocolate cookie truffle tartlets π² π« πͺ
