These crispy Italian rice balls, filled with gooey mozzarella, are perfect for lunch, dinner, or as an appetizer. You can even freeze them for later!

๐Ÿ“‹ Ingredients:
๐Ÿ›ข๏ธ 1 tablespoon olive oil
๐Ÿง… 1 small onion, finely chopped
๐Ÿง„ 1 clove garlic, crushed
๐Ÿš 1 cup Arborio rice
๐Ÿท 1/2 cup dry white wine
๐Ÿ— 2 1/2 cups hot chicken stock
๐Ÿƒ 1/2 cup frozen peas
๐Ÿ– 2 ounces finely chopped ham
๐Ÿง‚ Salt and pepper to taste
๐Ÿง€ 1/2 cup grated Parmesan cheese
๐Ÿฅš 2 large eggs
๐Ÿฅ› 1 tablespoon milk
๐Ÿง€ 4 ounces mozzarella cheese, cut into cubes
