Tex Mex Cheese Enchiladas in a beef Chili gravy 
The best enchiladas you will make ! 
Ingredients
* 1 lb. 80/20 ground beef
* 1 teaspoon salt 
* ½ teaspoon black pepper
* 1/3 cup minced white onion
* 2 Tablespoon chili powder- if possible use Texas chili powder such as Mexene or Gebhardts
* 1 teaspoon garlic powder 
* 1 teaspoon oregano - Mexican oregano if possible 
* 2 teaspoon cumin
* ¼ cup flour
* 1 teaspoon salt
* 2 ½ cup beef stock
* 2 teaspoons fresh lemon juice
* 12 oz. medium cheddar from the block, freshly grated
* ½ cup minced white onion
* 12-16 fresh yellow or white corn tortillas

1. Brown your beef. Once beef has completely browned, do not drain the fat. Seasoned with salt black pepper., add diced onion, chili powder, garlic powder, oregano, cumin. Mix well. 
2. All purpose, flour and mixed to create a rule cook for one to two minutes on medium to low heat to cook the flour. 
3. Slowly add in your broth while mixing scraping the bottom of the pan to get all of the flavor. 
4. Add hot sauce and lemon juice. Turn off the heat and set aside. 
5. Shred your cheddar cheese. 
6. Cook your tortilla on a skillet adding 1 teaspoon of oil and flipping cooking until soft set aside. or you can microwave and warm tortillas. Cooking in a skillet is best.
7. Assemble your to enchiladas by adding 2 tablespoons of cheese, a tablespoon of onion, rolling and putting them seam down on a baking dish. ( add oil pans spray to your baking dish first.)
8. Top enchiladas with chili, gravy sauce, cheese, white onion, and bake in the oven about 10 minutes on 350° F until cheese is melted. 
9. Garnish with green onions, cilantro, and jalapeño.
