Our hearth bread is made with wheat + rye dough mixed from scratch, baked directly on the hearth of our oven. At the end of the night, the fire goes out but the oven doesn’t cool. It holds so much heat that the next morning it’s still pushing 600F. Before we make anything else we cool it down just enough and bake one single batch of bread using nothing but yesterday’s residual heat.
