Last month I hosted a âMocktailâ bar, in the old school sense of the word (think juice, edible sparkles and blue curaçao) for sixty kids with , an organization that gives underprivileged kids access to cultural experiences they wouldnât otherwise have.
This outing gave the kids the chance to see the Broadway production of The Wiz, including a pre-show full VIP treatment: red carpet, photo booth, hors dâoeuvres, cast member visit, and a mocktail bar curated entirely for them.
Watching those kids sip green drinks from martini glasses, do sour apple âshotsâ with the bartender, and just feel pampered and seen, something clicked.
The elevated drinking experiences I build, serve, and teach were never only about complex flavors. They are about the feeling that you are worth something bespoke. That you deserve to feel just as celebrated as everyone else in the room.
Sipping a crafted zero-proof cocktail is not a survival need. But the dignity of feeling seen? I believe that helps people thrive.
Itâs funny that the word âadultâ is baked right into the ANA acronym, yet my most clarifying moment on the true meaning of the word came from 60 kids in plastic martini glasses. But thatâs exactly the point. Every guest deserves something made just for them.

I recently joined Tyra Majors on KOMO-TV to share a secret for guests dining out: how to order a sophisticated non-alcoholic drink even when there isnât an NA menu. The trick? Ordering within Cocktail Families.
The Professional Perspective: The âlanguageâ of the bar hasnât changed since Jerry Thomas; it was simply codified for the modern era.. think great books like Cocktail Codex. Whether itâs a Sour, a Daisy, or a Collins, these templates are the DNA of balance.
For hospitality pros, this is your greatest tool. You donât need a âmocktailâ sectionâyou need to apply the same rigor to your NA bases that you do to your spirits.
The Strategy: Use high-tannin teas, verjus, or botanical infusions as your âbase.â
The Result: When your team understands templates, your NA offerings become repeatable, profitable, and structurally sound.
The Guest Takeaway: If the NA options are lacking, look at the signature cocktail list. Find a flavor profile you love and ask the bartender for that âtemplateââswapping the spirit for a strong tea or house-made shrub. You arenât asking for something âoff-menuâ; youâre speaking the bartenderâs native language.
The Bottom Line: Understanding the architecture of the cocktail makes the alcohol optional, but the craft remains intact.

Wait⌠an alcohol-free Sauvignon Blanc with real structure?
This New Zealand bottle genuinely surprised me. The acidity is lively and beautifully integrated, giving the wine shape, body, and a clean, lingering finish. Thereâs that classic grassy lift, bright lemon zest, and a thread of tropical fruit that adds just enough roundness without tipping into sweetness.
