Cornish Yarg is here!

It may sound like a pirate's exclamation, but this cheese is not as salty as a seafarer's speech. Made by Lynher Dairy in Cornwall, Cornish Yarg is a visually striking cheese wrapped in locally foraged nettle leaves.

This pasteurized cow's milk cheese looks similar to the Gorwydd Caerphilly we enjoyed earlier this spring, but it’s a touch younger and firmer of a cheese as it is aged only about a month before the creamery sends the cheeses to Neal’s Yard Dairy in London to sell. Cornish Yarg’s bright green nettle exterior gives way to a delicately earthy rind over a buttery, lemony and yogurt cheese within. 👌

“Yarg” in the name is actually “Gary” spelled backwards—a reference to Alan Gray, the Cornish farmer who found the lost 17th Century recipe for this cheese in the 1980s started recreating it.

This is a super snacky, seasonally appropriate cheese, so we hope you'll come in and snag a wedge!

Is it a mountain, or is it cheese? 🏔🧀 How about a mountain made of cheese?

Summit is an ashed soft-ripened cheese made from pasteurized goat's milk 🐐 by Mountain Lodge Farm, a farmstead creamery in Eatonville, WA. It's sort of like a Valençay- or Pouligny-Saint-Pierre- style cheese, but with a PNW twist. 🌲

Mountain Lodge Farm is at the base of Mt. Rainier (Tahoma), the Crown Jewel of the Cascade Mountain Range. Summit is crafted in the image of Mt. Rainier, which is also one Washington State's 5 active volcanoes.

This cheese offers a small but mighty explosion of flavor: milky, tangy, minerally, with a bit of brown bread-crust earthiness and a hint of fermentiness at the rind. The cheese starts out chalky in the center and somewhat firm, but becomes progressively delicate and molten as it ages--sort of like an homage to the actual mountain and its 🌋 contribution to our region's landscape.

If you are looking for a show-stopper for your next cheese board, or for a solo cheese to impress, this is the one. 👌

Here's a pregnancy-friendly version of our Cheese Platter that went out this weekend. 🤰🏾🧀 While our platters are set and don't allow customization, we do accommodate for food allergies and special circumstances (like a pregnant person whose doctor has told her that she cannot have raw-milk or soft cheeses, for example). While the the vast majority of cheeses we sell--aside from our softer cheeses aged under 60 days, of course-- are made with raw milk, we were able to make this one happen.

🧀 Jasper Hill Farm Porto-Washed Harbison (cow's milk / bark-wrapped soft-ripened cheese / Vermont) *the request was for just one soft cheese for the non-pregnant people
🧀 Il Fiorino Pecorino Toscano Fresco (sheep's milk / uncooked-pressed cheese/ Italy)
🧀 Widmer's Cheese Cellars Mild Brick Cheese (cow's milk / washed-rind cheese / Wisconsin)
🧀 Stelvio DOP (cow's milk / Alpine-style cheese / Italy)
🧀 Sant Gil d'Albio Garrotxa (goat's milk / uncooked-pressed cheese / Spain)
🧀 Kaasboerderij 'T Groendal OG Kristal (cow's milk/ aged Gouda / Belgium)
🍒 Dried tart cherries (California)
🥜 Marcona Almonds (Spain)
🍯 Girl Meets Dirt Vanilla Plum Medley Spoon Preserves (Eastsound, WA)
