We've been smoking lots of Sablefish (aka Black Cod) with Alder and Hickory and the quality is out-of-this-world. There is so much oil in the Black Cod, which makes it great for smoking, and there are more Omega-3's in this fish than the King Salmon. If you like bacon, but don't want the unhealthy aspects of it, this Smoked Sablefish is a perfect substitute.
