At Hot Cakes, protecting Washington’s wild lands isn’t just a seasonal trend—it’s been a founding principle of our company since day one.

In years past, you’ve seen us celebrate Earth Week with collaborative molten cakes and partnerships with Washington Wild. This year, we are taking a moment to step back from the "dessert specials" and return to the heart of the matter: Advocacy.

We believe that to keep making the treats you love, we must protect the local ecology that sustains us—from our waterways to our salmon and every evergreen in between. We invite you to celebrate Earth Day by supporting the work of Washington Wild. Check out their latest conservation campaigns and help us protect the wild spirit of Washington State.

Happy Earth Day! 🐋🌲🌎

🥥🍍 We traded cocoa for coconut with our latest layer cake. This tender white cake is infused with dark rum and organic coconut milk, then layered with fresh pineapple marmalade for the ultimate spring bite. It’s light, bright, and officially available as a plated feature or as individual slices in our pastry case.

Key Lime Pie Shake: The ultimate refreshing pick-me-up for those drizzly April afternoons! Enjoy key lime pie in a whole new way: a cold, sippable, blended treat! Topped with whipped cream, graham cracker crumble, and a fresh slice of lime. It’s the perfect, creamy balance of tart and sweet, capturing that sunshine-in-a-glass feeling we’ve all been craving. It’s a decadent slice of pie served up old-school style - no fork required. Back on the menu for a limited time! 🥧

☔️🍊 April is looking tropical! We’re shaking things up with brand-new specials to pair with our recently launched spring desserts. Rain or shine, we have just the thing to put a spring in your step. There’s a seat (& a treat) waiting for you at all three restaurants. See what's new within our stories!

Hurricane Cara: The rainy season in Seattle has us needing a little vacay to the tropics. Back for another year, the Hurricane Cara is our elevated take on a vacation classic. We’ve swapped standard citrus for peak-season Cara Cara oranges—a tribute to our owner, CaraMia—to create a drink that’s perfectly tart, exceptionally sweet, and incredibly refreshing. It’s the ultimate spring sipper, but like the Cara Cara season, it won't be here for long 🌊🍊🍹✨

Rhubarb & Sour Cherry Crisp: Under a buttery streusel of almonds and oats, tart sour cherries and Washington rhubarb are baked until bubbly and perfect. Served with a scoop of Lopez vanilla ice cream, this dessert is the ultimate cozy springtime treat.

Toasted Coconut Layer Cake: A taste of sunshine! Layer cakes have become a bit of a frequent request, but our latest debuts as white cake (we're sorry chocolate fiends plzzzz forgive us 🙏). This cheerful spring dessert features tender white cake infused with organic coconut milk and dark rum, layered with fresh pineapple marmalade. The cake is then iced with a toasted coconut buttercream and served alongside a bright passionfruit-lime sauce, crispy, slightly salty coconut flakes, and a scoop of Lopez vanilla ice cream. The combination of contrasting textures and zingy tropical flavors makes this dessert such a fun addition to our spring lineup. A la carte slices are also available from our pastry case.
