Our first fruit of the 2022 harvest, Sauvignon Blanc from the Beckstoffer Melrose Vineyard, is in. We pressed the 3.2 tons into a stainless steel tank to settle of the “gross lees” (a cool word for heavy sediment) for 48 hours. As the great Izzy Mandelbaum said, “it’s go time!”.

Once the Cabernet grapes go through the crusher-destemmer, they are loaded into our 6 ton French oak fermentation tank. We then lower the temperature of the tank to allow a “cold soak” to take place for 5 days. During this period the extraction of flavor and aroma is enhanced which ends up producing a better wine. Especially when it’s Beckstoffer fruit! We start the fermentation process after the cold soak period……but more on that later!
Once the fruit gets to the winery, it starts by being hand sorted to remove any leaves or other unwanted debris before riding up the belt and falling into the crusher-destemmer. Stay tuned to find out the next step of making Cabernet!

It’s a beautiful day in Rutherford as we check on our Cabernet Sauvignon. An unexpected light rain last night was just enough to remove some dust from the grapes and dampen the soil. After checking the brix and flavors, we are looking at harvesting next Friday.
And we are off! Crush 2021 officially began today with 2021 Sauvignon Blanc from Beckstoffer Melrose Vineyard.
