First four books of 2022!
I highly recommend 60 Hikes Within 60 Miles of St. Louis. The boys and I venture out a lot and I’m excited to check off some places I didn’t even know existed. It’s also nice to have a resource with such great details about the trails.
The People We Meet on Vacation is a cute little love story. Easy, quick read.
Golden Girls was fun. A little bit of mystery and the author does a great job describing the setting and character details. Great beach read
Molly Kochan, the writer of Screw Cancer is so creative and lovely in the telling of her story. Ive enjoyed her podcast Dying For S*x but the book dives more into her past and truly tells the whole story

I’m not gonna lie, I was a little disappointed in myself when I had a hankering for a sandwich and ended up not even eating the bread. This salami, Turkey, and pickle sandwich became an unwich after two bites. Berry medley and beets on the side.
Tip: if you’re the saucy type, ditch the mayo or high fat dressing and replace it with a pickle, avocado, or mustard.

Unwrapped sushi and horrible lighting for a picture.
Sweet chili shrimp, avocado, and brown rice. This is the perfect (and easy!) example of a protein, fat, and carb on your plate.

Roast with carrots and dairy free potatoes
2 lb roast
Thyme
Garlic
Salt and pepper
24oz beef broth
Two bay leaves
Rosemary
I don’t really measure but we love garlic, so use a lot of that. Put roast in crockpot with broth and top with spices. Cook on low for 8 hours. At six hours add carrots.
Boil potatoes and mash with liquid from roast. You can add corn starch to the broth to thicken for gravy
