Getting ready for my nephew to come to dinner and learn how to make the perfect roasted salmon. Getting his favorite roasted potatoes started....roasted with olive oil and salt at 400 for about 25 minutes, then smashed. When he gets here, I'll warm them in a skillet with rosemary and butter.

Used the skillet method for a quick gluten-free pasta lunch ( with roasted yam, scallions and herbs). Put dry pasta in skilket, cover with water, heat on high. When water comes to a boil spaghetti is done! So much easier than waiting for a huge pot to come to a boil.

I love brunch! Today I made two frittatas for a client's party. One was Spinach, Cherry Tomato & Feta with caramelized onions and fresh oregano, the other was Mushroom & Roasted Red Pepper with leeks, parsley and gouda.
