Committed to Cakes

I've been kicking around an idea.

Most people here know me from cheesecake photos, but very few people see what goes into creating them.

Lately I've been thinking about starting a TikTok and YouTube channel to document the process—recipe development, successes, failures, and the occasional "what happens if I try this?" moments.

This morning's drive to work had me thinking about an Ube Cheesecake with a Biscoff cookie crust and a Coconut Cheesecake with a macadamia nut crust and brûléed sugar topping.

No promises yet, but I think it might be fun to bring everyone along for the ride and show what goes into creating these desserts.

What would you want to see? The baking process, recipe development, behind-the-scenes, or finished cheesecakes?

Sometimes the best ideas come from customers.
A request came in to take my Biscoff Cheesecake and add a caramel swirl.
Challenge accepted.
The result? A creamy Biscoff cheesecake with ribbons of caramel baked right in, finished with even more caramel and Biscoff crumble.
Not going to lie... after the test sample, this one might have earned a permanent spot on the menu.

Raspberry Swirl Cheesecake.

People always ask for the inside cut view… so here it is.

Brought this one in for the crew at work and it didn’t last long. That’s how you know. No leftovers, no fake compliments, just empty plates.

Raspberry Swirl Cheesecake. Graham cracker crust, new heart shaped spring form pan. Had to test it out before I make care of another order. Need to clean up the edges a bit, but not bad.

Completed Orange Creamsicle Cheesecake. Fresh orange zest mixed in with the top 1/3 layer of the cheesecake, the other 2/3 is a rich "vanilla cream." All on an almond crust. Baked for a long time customer that has been purchasing from me for years. Always a pleasure to bake for her and her family on the holidays and whenever she is in need of a sweet treat. #

Made this all natural Orange Creamsicle. In the past I had used a flavoring, but the recipe changed and it came out very bitter and awful. This year I just used the zest of an orange to flavor it. Baked on an almond flour crust. I will post photos once it's cooled and out of the pan.
