In a pinch I make sure to have this package in my freezer ALWAYS. When I don’t have fresh this right here is my go-to.

Line sheet with aluminum foil.
Coat the frozen pieces with olive oil.
Season to your taste- I use Kinder The Blend.
425° for 12 min and the Broil on HI for 4ish-watch it, your oven might be different!

The side possibilities are endless!

John grabbed a pork tenderloin with a sale sticker. I NEVER buy them because they’re ALWAYS tough…BUTTTT I did it! I am beyond proud of this one!

Sear on both sides for 3-4 minutes and transfer your skillet to the oven that you preheated to 400°! Let that get to 140° temp, mine was 1.20lb and took 15 min. I tented aluminum foil and let rest for 5 min before I cut into coins.

It was so good! Then did I my famous mashed potatoes and gravy and some yeast rolls! John requested cream style corn! Yummmm.

EDITING TO ADD: I pulled it and let it sit out for an hour before cooking!

I lived in Arkansas, between 3 neighboring cities, my entire 35 years of life. I couldn’t go anywhere without knowing, at minimum, 2 people and if I didn’t know you, i knew OF you. I knew what businesses to shop with and who not. I knew where everything was. I knew the best restaurants and coffee shops and had my favorites. I knew a lot of owners personally, being a small business owner makes that inevitable. I knew all the drama and all the tea, whether I asked for it or not.

I KNEW TOO MUCH.

We moved 6 hours away. I don’t know anybody. I still use gps when I get in the car. I don’t know the good, the bad, or the ugly and I am not privy to an ounce of drama.

The freedoms in that is indescribable. Everything I feared in this move is exactly what I needed. The biggest freedom is from reputation, rumors, and expectations.

I don’t have a reputation.
My name is nothing here, so not a rumor one.
There are no expectations of me from anyone. No pressure to shop there because we’re friends, no need to avoid there because we aren’t.

I’m getting to completely restructure priorities and learn a new place, be who I want to be, find new favorites and create a new life.

At 35, I started over. I may never get a full restart button again so I won’t waste this one.

PS. We did find a groomer yesterday that we love! The list of finding new salons, barbers, groomers, restaurants, coffee shops…it’s endless, but it’s our current adventure and I’m loving being IN IT.

Woke up with a terrible headache and remembered a reel of a girl sharing this “migraine hack”!
John says it’s definitely some sort of placebo and somebody out there said “I bet you I can make some idiot put a clip on her eyebrow” 😅
We’ll call me an idiot cause it’s working 😂😂

Today I’m sharing an ADD victory.

We decided to head to bed a little early so I took 5 extra minutes to load/start the dishwasher and prep the coffee maker.
I also told myself I wouldn’t touch my phone, not even to check the time, when I woke up until I had my morning going.

YALLL.
I walked into the kitchen on a MISSION.
Hit the coffee pot buttons like i was applying to be a barista.
Grabbed that cookie sheet like a Chopped contestant.
Preheated the oven with sasssss.
Started my pot of water for tea and then whirled over to the fridge to refill Js lemonade dispenser.
Then i emptied the dishwasher.

I was ON FIRE 🔥 !!!

So much i WANTED to keep going.
Started the dryer-started another load of laundry and made breakfast…

If i needed to paint a picture id say someone would probably feel they were witnessing Martha Stewart at her Swan Lake debut…or something definitely just like that, ya know?

Were talking a few intentional minutes and I was done with all my morning chores with biscuits and sausage on the table before 8!!!

—-I had got myself into a slump of sleeping past 8 and not doing any morning duties because I’d convinced myself when I woke up it wasn’t morning anymore!
