You may recognize Margo. She has been interning with CSAP4H since the summer season and we are so grateful for her hard work! Her favorite vegetable is beets. One way she likes to prepare them is first boiling then chopping them up for salads.

Cait is one of our winter interns and is a joy to have on our team! In the winter, Cait eats a lot of beans and greens, often with cornbread or wrapped in a tortilla with pepper jack cheese. Cabbage is her favorite vegetable and she likes to prepare it as a kraut or kimchi, in soups and stews, slow-braised, or roasted in a hot oven until the edges get crispy.

Stephanie has been volunteering with us this winter season to help pack and deliver CSA shares. We appreciate her so much! During the summer months, you may find Stephanie at a park having a picnic eating her favorite vegetable (tomatoes) with some olive oil, bread and cheese. Yum! 😋

Did you know that cowpeas were grown in the Niger River Basin of West Africa as far back as five to six thousand years ago? Hoppin' John is a cowpea dish traditionally eaten on New Years, but it is delicious year round, especially when paired with hearty winter greens.
