Really fantastic visit with Shikishima. They are using yeast #8 which is an old variant of 6. They coax beautiful raspberry skin aromatics from it amid mouth watering acidity. They also have some rad retro labels.

Hitomebore is a table rice (for eating) grown in Iwate, Miyagi, Gunma, etc. It's also being used to make sake even though it has a high protein count. Have you had a sake made with it yet?!

Restaurants! Get your Black Skull sake kasu for curing fish, pickles, etc.
For those of you who don't know, kasu is the "lees" or leftover spent grain from brewing. It's rich in nutrients and alive with yeast and koji. It creates an amazing crust on proteins.
