UbešŸ˜šŸ˜šŸ˜

Ube has long been a niche product in much of the world, recognized and consumed most frequently among Filipino communities. But in recent years, it’s gained a reputation as a rising successor to matcha. https://cnn.it/4tV2mSM

Try sapin-sapin at Kahel Filipino Cuisine, now open in Vancouver, WAšŸ˜

ā€œSapin-sapin is a layered glutinous rice and coconut dessert in Philippine cuisine. It is made from rice flour, coconut milk, sugar, water, flavoring, and coloring. It is usually sprinkled with latik or grated coconut among other toppings. The dessert is recognizable for its layers, each colored separately.

The name originates from the Tagalog word sapin which means "underlayer [for cushioning]" (e.g. a blanket sheet, compare with Cebuano hapin). When reduplicated as sapin-sapin, it means "having several layers"- Wikipedia

April is Filipino Food MonthšŸ˜ what better way to start it than with Pamana PDX hosting their dinner menu preview.

We had to try most everything on their menu, and each one did not disappoint🤩

Our favorite is the Salmon Kinilaw (ceviche-like dish)šŸ˜

They will start serving their dinner menu April 30šŸ—“ļø

Chicken Adobo made the The New York TimesšŸ˜ This particular recipe has the addition of coconut milk in it.

It is the national dish of the Philippines, and the subject of intense and delicious debate across its 7,100 islands. Whether consumed in Manila's heat or on the edge of a New York winter, adobo holds the power to change moods. https://nyti.ms/49Y4nVb
