The variety is famously expressive of both place and vintage, but there is another story unfolding quietly in the cellar: the story of time itself. How long the w**e spends in barrel. How much influence the oak has. How that oak changes as it moves from new to second- and third-year barrels. And, ultimately, how all of those decisions shape the w**e that ends up in the glass. We checked the Pinot Nour grapes and they are almost ready for harvest! So exciting! We are going to make four different options with these grapes this fall. We are excited to explore the w**es with you. CaelestisCellars.com

Before we ask a vineyard owner to harvest the grapes, Christian tests the sugar content. We are letting these grapes live on the vine a little longer this time to take down the acidity.
