Nộm Sách Bò Trái Vả
Tripe and Green Roxburgh Fig Salad
Roxburgh Figs are both a culinary and a botanical marvel. Nati South and Southeast Asia, this apple sized fig emerges directl the trunk of the Roxburgh fig tree, growing under the shade of shockingly large and glossy heart-shaped leaves. These floral, overgrown bulbs of figs are typically pickled when green in Vietnam to reduce the natural tannins, and in the City of Hue are the centerpiece of a funky and texturally heterogenous salad featuring thin slices of tripe, pronounced chili spice and funky shrimp paste.

Nầm Nướng Phố Gầm Cầu (Nầm bò, Nầm Dê, Nầm
Heo)
Gầm Cầu style Grilled Pork, Beef and Goat udder Grilled Udder has, for a long time, been a delicacy throughout the entirety of Vietnam. Unctuous and springy, and with a necessary char, they are the main reason to visit Gầm Cầu street in Hanoi, where diners vacillate between chugs of beer, loud cheers and clinking glasses, and communally grilling thin strips of marinated udder, along with the obligatory grilled eggplant and okra.
We are serving the maximalist version of this dish with the three most popular types of udder (pork, beef, and goat) and the three most popular dipping sauces.
