Spinach Orzo topped with pan roasted Mushrooms
This came out delicious and I hope I can recreate it again soon!
While the Orzo was cooking, I sauteed diced onions, garlic, and chopped spinach.
When the Orzo was done, I drained it and mixed it with the spinach mixture.
The mushrooms (baby Bella's) were pan roasted with a mix of butter and olive oil, a sprinkle of thyme, black pepper, and salt at the end till they were beautifully browned.
Placed the spinach Orzo mixture in a bowl and topped it with the mushrooms. So much flavor. I finished the bowl and wished I had made more!

Happy Sunday!
Started this day with a little cherries jubilee waffles 🍒
Pitted & sliced the cherries in half. Cooked them with a little ghee, brown sugar, and spiced rum. Added a little cinnamon near the end. Spooned them over homemade sweet cream waffles.
I'm full but I'm still drooling over the picture!!

Grilled street corn... Smothered in mayo, lime juice, and elite seasoning then grilled to perfection. Sprinkled with grated Parmesan cheese

I was craving lemon bars - nice & simple - shortbread crust and lemon curd. However, I found this easy marshmallow meringue recipe and it made them amazing!
3 egg whites, whipped until stiff peaks form.
Add a 7 oz container of marshmallow fluff and whip again till combined and have stiff peaks
Place on top of the bars then bake at 350°F for about 15-20 minutes till the meringue puffs and browns.
So easy and so delicious!
