Aguachile Rojo de Camarón 🦐 🔥

Lightly cured shrimp in a salsa roja made with chile de árbol and lots of fresh squeezed lime, served with cucumber from Yarnicks Farm Official , avocado, and a little extra cilantro for good measure. The shrimp stays sweet and silky from a short cure, while the salsa brings a steady, spicy heat that’s cooled by the cucumber and avocado. Bright & perfect for summer ☀️

This one went through a few versions before landing on the menu. At first I wasn’t sure how people would respond to a shrimp version of this dish, but it’s become one of my favorite things on the menu!

Monica, who works the tortilla and prep station, is usually the person I cook alongside the most. She also has one of the most intuitive palates in the kitchen. What makes her input especially useful is how immediate it is. No long deliberation, no “maybe.”

Over the last few weeks, a lot of the small adjustments that brought it together came from tasting spoons and quick conversations between us in the kitchen!

3 years!!!

Restaurants are living, breathing things. They take time to grow into what they’re meant to be and honestly, I feel like we’re just getting started.

As Duo’s hits toddler status, it’s changed a lot since day one and somehow keeps getting better every single day (less crying, more margaritas).

Watching this place grow into what it is now has been really special. And yet we’re still pushing, still tweaking, still trying to get it right every single day. That’s always the goal. I am lucky to work alongside a team that cares as much as they do. The attention to detail, consistency, and pride they take in what we do day in & day out is what makes this place what it is. I love our team. Like…..a lot!!

And to our warm guests, mil gracias.
For showing up, for trusting us, for being down for whatever we put on the menu, and everything in between (even when we change things up on you). Pittsburgh, this city means a lot to me and I’m really proud to be cooking here.

Okay if you’re still reading this you’re either very supportive or avoiding doing something else. Respect.
